3 Heart Roasters is an Atlanta based roaster meant to be cheeky, but also represent a desire to challenge the dogma and expectations that come with 'third wave coffee’. Seriously refined note pairings that pleasantly surprise your palette in very unique and original ways. All officially graded in the top 10% ranking of the artisanal coffee market.
All note descriptions below are indicative of the following particulars of brew setup; fine grind of 30 grams of coffee to 250g water. Aeropress brew method. I’ve found this to be the optimal ratio for high concentrated ‘punch’ of all the notes in their fullness.

SHATAWENE VILLAGE
Extremely comforting aroma right out of the bag. Has a calm earthy acidity to it. Very very subtle and subdued sweetness; very tea like in its smoothness. Would recommend for a rainy day noon option. The candy cane does a good job of keeping the açaí berry and dreamsicle from overpowering in sweetness. It all comes together far more relaxed and conservative than the notes at face value would perceivable suggest. Solid option as chilled coffee as well.
FINCA TERRERITO
I typically reserve coffee with chocolate notes as desert coffee options ie after dinner coffee. This combination however has a more balanced ratio of notes allowing for the chocolate to be more subtle and bright. I would have this as an after lunch coffee option as well. The cider note calms down the orange while keeping the cocoa more reserved. I’d liken the cocoa note to the same way that mint is experienced in mint chocolate chip ice cream; polarizing but not overpowering. It being specifically Cocoa Krispy vs flat out cocoa is the perfect note option for chocolate, as it has a very discernible taste that doesn’t get boring while being slightly nostalgic at the same time.
As it cools down the body remains full and hearty but ‘clean’ (the orange attribute is to thank for this) - plus the apple sauce keeps it ‘juicy’. When refrigerated, the Cocoa Krispy note screens far forward, making it taste like a chilled dark chocolate with fruit notes.
BELÉN GUALCHO
This blend is a proper bright balance of tart and sweet. The roasted pineapple gives the raspberry a very juice like signature while still letting peaks of the berries natural tartness remain present. Less or more sugar/creamer will largely shift the forwardness or recession of said 'twang'. The snicker doodle brings forward the sweetness and and grounds all the notes together with smooth traces of honey. Great in the morning for a kick that's not overly citrus, or in the evening as a desert coffee.
Quickie
”We had our Finca Terrerito made into instant coffee, and, well, it turned out pretty dang good! It’s a different process than the grocery store stuff, and it preserves the character of the coffee MUCH better. We hope you enjoy it!”

This type of flavor profile range is often only experienced in an espresso or americano, but thanks to a very refined process of craft, it comes by way of immediacy. The notes are very full in body with a sentiment of fall comfort. Strong notes of chocolate and crisp but smoothed sweetness akin to cane sugar.
